ABOUT THE ROLE
The Head Chef in our restaurant in Pancras Square, alongside with the General Manager, is responsible for managing and leading the kitchen team, food quality, food costs and profit margins. The Head Chef ensures that the kitchen runs smoothly and that the team performs to its highest potential in all aspects of their job, by adhering to Company standards, policies and procedures and statutory requirements. The role requires someone who thrives on leading by example by developing and motivating the team to work to the highest possible standard
Key Responsibilities:
• Ensuring high levels of Food and Health & Safety are maintained at all times.
• Accountable for shift and daily temperature records (HACCP) and food labelling adherence in the site
• Full accountability for consistency of food quality, presentation, portion control, storage and stock rotation
• Excellent product knowledge and service skills to achieve quality control during service at all times
• Ensuring stock checks are completed at regular intervals with good levels of stock rotation, management and
control
• Responsible for a high standard of cleanliness and organisation of all food areas and equipment
• Staff Management including rotas, updating relevant systems, recruitment, training (Food & Health Safety,
company policies & procedures) and mentoring
• Managing the performance of the team through ongoing evaluations, training and development
• Understanding reports regarding cost control and expenditure alongside revenue
• Accurately report all costs and expenditure and pro-actively manage cost areas
• Maintaining food costs, wastage and labour control
• Working closely with the General Manager to ensure the appropriate standards are being met
Our Requirements
• 2 year’s experience in a similar role within the restaurant industry, it would be desirable for experience of Asian
cuisine
• A strong understanding of Food, Health & Safety including COSHH and HACCP
• Strong communication skills with the ability to communicate with people at all levels and effectively coach and
development your team
• Experience of managing a large kitchen brigade
• Experience working in a fast paced and busy environment
• Outstanding problem solving and organisational skills
• Hardworking, self-motivated and dedicated individual
• A good understanding of budgeting, forecasting and labour control
• Good working knowledge of general computer systems
